Wine Description for Pommard En Boeuf AOP 2023 by Boris Champy

Character
Boris Champy interprets the powerful side of Burgundy with this Pommard. The vineyard site En Boeuf – the name refers to the historical ox strength required to plough this parcel – delivers a Pinot Noir of substantial structure. The 2023 vintage shows itself already accessible despite its youth, with the characteristic minerality and depth that distinguish Pommard from the more elegant neighbouring communes. This is Burgundy for those who appreciate their wines with backbone.
Terroir & Origin
Pommard lies in the heart of the Côte de Beaune, on iron-rich, clay-laden soils that lend the Pinot Noir particular density. The En Boeuf vineyard site benefits from its south-easterly exposure and calcareous subsoils, which give the wine its characteristic tension. Terroir shapes things here more than elsewhere: whilst Volnay stands for elegance, Pommard embodies the muscular side of Burgundian Pinot Noir. Boris Champy, a winemaker with deep roots in the region, works respectfully with these old parcels and gives terroir pride of place.
Grape Variety & Vinification
Pinot Noir shows its full aromatic spectrum in Pommard: dark cherries, undergrowth and an earthy component reminiscent of truffle and forest floor. Champy pursues an artisanal approach that eschews excessive extraction and instead focuses on precision and authenticity. The moderate alcohol content of 13% speaks to restraint in both vineyard and cellar – a deliberate counterpoint to overripe, alcohol-driven styles. Ageing is conducted traditionally, with the aim of preserving fruit clarity whilst developing the necessary complexity.
Food Pairing Suggestions
This Pommard calls for hearty cuisine: Coq au Vin, Boeuf Bourguignon or roasted duck breast are classic companions. The wine also shows its strength with aged soft cheeses such as Époisses or with game dishes featuring mushrooms. The structure also carries braised beef or lamb leg with herb crust.
