Wine Description for Pommard En Boeuf AOP 2023 by Boris Champy

Colour & Appearance
Medium-dense purple-red with youthful luminosity – a wine that does not hide its origins from the hot vintage of 2023.
Nose
The nose is complex, dark and possessed of an almost meditative, earthy depth. Tar, sumach and black pepper open the play, followed by forest floor, undergrowth, tobacco and fermented cardamom. Beneath pulses a ripe, juicy fruit layer of damsons, dark cherries and raspberries, refined by delicate notes of rose petals and violets. A wine that smells like an old Burgundy forest in autumn.
Palate
On the palate, the En Bœuf unfolds its full personality: a dark, ripe fruit core enveloped by a silky, perfectly integrated tannin. Here backbone and charm combine in elegant fashion – a Pommard with genuine rondeur, without losing its firmness. The texture is well-balanced, the mouthfeel poised and threaded through with a fine, characteristic sweetness that never becomes cloying.
Finish
Long, saline and piquant – the finish possesses a lively minerality that inevitably promotes the drinking experience. Structure and length are impressive; the wine remains present without becoming tiring.

The parcel En Bœuf lies in the higher elevations of Pommard, near Nantoux – a location that lends the wine its distinctive, earthy character and strength. The vineyard site underscores what sets Pommard apart from its more elegant neighbours: depth, substance and character.
Grape Variety & Vinification
Pure Pinot Noir from dense plantings with approximately 10,000 vines per hectare trained in Guyot. Harvesting took place after 15 September, deliberately after the heatwave. Boris Champy worked with 70% whole bunches and gentle extraction. Ageing over twelve months – one third in new, two thirds in one-year-old oak (Pièce) – lends the wine depth without over-shaping it.
Food Pairing Suggestions
An ideal companion to Bœuf bourguignon, braised lamb shoulder with Provençal herbs or duck breast with cherry sauce. Also a seductive combination with aged Époisses or Comté.
