- The nose is complex, dark and possessed of an almost meditative, earthy depth. Tar, sumach and black pepper open the play, followed by forest floor, undergrowth, tobacco and fermented cardamom. Beneath pulses a ripe, juicy fruit layer of damsons, dark cherries and raspberries, refined by delicate notes of rose petals and violets. A wine that smells like an old Burgundy forest in autumn.

- On the palate, the En Bœuf unfolds its full personality: a dark, ripe fruit core enveloped by a silky, perfectly integrated tannin. - Pure Pinot Noir from dense plantings with approximately 10,000 vines per hectare trained in Guyot. Harvesting took place after 15 September, deliberately after the heatwave. Boris Champy worked with 70% whole bunches and gentle extraction. Ageing over twelve months – one third in new, two thirds in one-year-old oak (Pièce) – lends the wine depth without over-shaping it.
