- The Climat En Boeuf lies in the upper part of Pommard on a full hillside slope, nestled in a well-ventilated valley basin. For Boris Champy, who took over the venerable Domaine Montchovet in 2019, the once cooler Hautes-Côtes de Beaune represent the future of Burgundy in the face of climate change – and this 2022 proves him right.
- Grape Variety & Vinification
- Pinot Noir from traditionally low-trained vines (10,000 plants/ha) in simple Guyot pruning. Hand-harvested at optimal ripeness, gentle extraction with 70% whole bunches in wooden barrels, followed by 12 months of maturation in 50% new barrels. The estate has been farmed biodynamically since the 1980s and was the first Demeter-certified winery in Burgundy.

- With Pasta alla Norma, monkfish sauerbraten or wild boar chops with caramelised onions and spring cabbage. The acidity and polished tannins make it an ideal companion to hearty, aromatic dishes.
