Wine Description for Pommard En Boeuf AOP 2022 by Boris Champy

Colour & Appearance
Transparent ruby garnet, brilliantly clear and of remarkable luminosity – a Burgundy that reveals its origins already in the glass.
Nose
Joyful and juicy, this Pommard presents itself with a basket of freshly picked wild raspberries, blackcurrant and mulberries. Behind these unfold the classic Burgundian notes: undergrowth, sandalwood, dark cocoa and a hint of plum jam – an aromatic bridge between youthful fruit and mature complexity.
Palate
Ethereal and transparent, the fruit displays radiant character. The fine extract underpins the prominent fruit impression, whilst the ripe acidity runs through the wine from the first sip to the ethereally cool finish. The gripping yet polished tannins act as the perfect wingman to the acidity – everything here is about drinking pleasure rather than brute force.
Finish
Fruity-herbal and cool, with ethereal length and refreshing aftertaste. A finale that invites the next sip.
Terroir & Origin
The Climat En Boeuf lies in the upper part of Pommard on a full hillside slope, nestled in a well-ventilated valley basin. For Boris Champy, who took over the venerable Domaine Montchovet in 2019, the once cooler Hautes-Côtes de Beaune represent the future of Burgundy in the face of climate change – and this 2022 proves him right.
Grape Variety & Vinification
Pinot Noir from traditionally low-trained vines (10,000 plants/ha) in simple Guyot pruning. Hand-harvested at optimal ripeness, gentle extraction with 70% whole bunches in wooden barrels, followed by 12 months of maturation in 50% new barrels. The estate has been farmed biodynamically since the 1980s and was the first Demeter-certified winery in Burgundy.
Food Pairing Suggestions
With Pasta alla Norma, monkfish sauerbraten or wild boar chops with caramelised onions and spring cabbage. The acidity and polished tannins make it an ideal companion to hearty, aromatic dishes.
Special Features
A Pommard with moderate 12.5% alcohol, which prioritises elegance over power – already in its fruit phase a „more than joyfully gulpable fellow“, as they would say in Burgundy.
