Wine information
For this wine, Boris Champy used Pinot Noir from the En B½uf parcel in Pommard. The parcel is located in the heights of Pommard just before Nantoux. The vine density is around 10,000 in Guyot training. Boris Champy destemmed half of the grapes, so there are 50 % whole bunches. However, due to the vintage in which there was Botryrtis, he de-stemmed the grapes completely, treated the styles with sulphur and formed a millefeuille from layers of de-stemmed grapes and rape to ferment the grapes. He extracted gently and aged the wine for twelve months in new wood for one-third of the time in the Pièce and two-thirds aged in one-year-old wood.

Nose
Boris Champys Pommard En B½uf 2021 seems absolutely typical for the appellation. There are notes of plums, cherries and raspberries, plus some sumac and barberry. Underneath, you find notes of earth, forest floor and undergrowth with some dark chocolate. In addition, there is a touch of the best oak. This makes you want more.
Palate
On the palate, the En B½uf as the only wine of the vintage a fine charming sweetness. One also finds the earthy and dark fruity, the undergrowth and some rock. Towards the finale, the acidity becomes more and more present and agile, the tannin remains quite dry, the wine is transparent and lean because Champy has largely dispensed with extraction.
