The domaine's red cru comes from the flint vineyard site Les Romains; the biodynamically certified estate (BIODYVIN since 2005) relies on particularly gentle destemming for its red wines.

Colour & appearance
Luminous cherry red – dense and clear at once, a robe that promises concentration without ever feeling heavy.
Nose
Concentrated and dark-toned, yet remarkably precise: dark cherry, plum, lingonberry and redcurrant meet graphite, flint and a hint of pale smoke. The wood notes are still noticeable at present – a fine touch of caramel – but with air the fruit moves to the fore, and the mineral-smoky dimension provides depth and tension.
Palate
Firm, concentrated and powerful, yet without weight. Sour cherry, cranberry and redcurrant bring freshness and juiciness; graphite, flint and a tart spiciness unmistakably trace its silex origins. The tannins are perceptible but finely polished and medium-grained. A mouth-watering minerality and discreet bitter notes lend contour and backbone.
Finish
Dense and profound, with lingering mineral tension. The wine is still very young – patience will be rewarded as the wood integrates further.
Terroir & origin
The grapes come from the silex vineyard site Les Romains. Flint stores warmth and imprints on the Pinot Noir that characteristic smoky-mineral signature which can be tasted here sip by sip. Domaine Vacheron, BIODYVIN-certified since 2005 as one of the region’s first estates, consistently vinifies its single vineyards separately – 46 hectares run by cousins Jean-Dominique and Jean-Laurent Vacheron.
Grape variety & vinification
Pure Pinot Noir, vinified dry at 13.0% vol. In recent years the estate has invested significantly in red winemaking, including an especially gentle destemming – you can sense this care in the wine’s precision.
Food recommendations
A serious food wine: duck breast with cherry jus, rack of lamb, partridge or beef fillet with mushrooms. Also a fine choice with grilled tuna or robust mushroom dishes.
Special features
The estate’s red cru – and convincing proof that Sancerre Rouge is far more than an insider tip. Jean-Laurent Vacheron learned his craft under Aubert de Villaine in Burgundy; this Burgundian precision, paired with the distinctive silex terroir, lends the Belle Dame finesse and profundity.
