Wine Description for Pajoré Barbaresco DOCG 2021 by Sottimano
- Colour & Appearance
- Deep shimmering cherry red with a dense, concentrated core and characteristically pale rim – the typical Nebbiolo signature.
- Nose
- A fascinating blend of floral and spicy notes dominates the bouquet. Pansy, violet and a hint of lilac initially veil the dark fruit side. Beneath lie preserved morello cherries, raspberry, elderberry and a whisper of sloe. Liquorice and dark chocolate lend depth, whilst kaffir lime leaves, dried bay leaf and oregano provide ethereal freshness and spice. Juniper and black pepper complete the complex aromatic interplay.
- Palate
- Forceful and charming in equal measure – this Barbaresco displays itself as juicy and invigorating with youthful exuberance. A precise acid structure clearly marks its significance within the overall framework. The restrained, silky tannin maintains the pressure elegantly without dominating. The fine mineral side underscores the contemporary, nonchalant interpretation of this great vineyard site. A silky texture carries the dark fruit with ease.
- Finish
- For minutes the dark floral side resonates, accompanied by the various herbal notes. Impressive length with sustained freshness.
- Terroir & Origin
- The vineyard site Pajoré lies north of Treiso with a south-westerly aspect. 75-year-old vines planted at high density, farmed organically since the 1970s by Sottimano – a vineyard with history and soul.
- Grape Variety & Vinification
- 100% Nebbiolo, destemmed and fermented for up to 60 days on the skins in open stainless steel fermentation vessels with regular punch-downs of the cap. Maturation over 24 months in large, slightly conical botti.
- Food Pairing Suggestions
- Brasato of beef with dried pointed peppers, braised calf’s tongue with sweet and sour lentil vinaigrette or a lentil and aubergine stew for the vegetarian option.
- Special Features
- A modern, accessible interpretation of a great Barbaresco that combines tradition with contemporary elegance. The organic farming and the advanced vine age lend this wine particular authenticity.
