- Deep shimmering cherry red with a dense, concentrated core and a characteristically pale rim – classic Nebbiolo optics of remarkable intensity.

- A fascinating blend of floral and spicy accents dominates the bouquet. Pansy, violet and a hint of lilac form an aromatic veil, behind which preserved sour cherry, raspberry, elderberry and a trace of sloe are concealed. Liquorice and dark chocolate lend depth, whilst kaffir lime leaves, bay leaf and oregano provide ethereal freshness and spice. Juniper and black pepper round off the complex aromatic profile.

- Forceful yet charming, this Barbaresco unfolds – juicy, invigorating, youthful. A precise acidity structure clearly marks its significance and lends the wine its nonchalant, contemporary interpretation. The tannin proves remarkably restrained, allowing the silky texture to shine beautifully whilst still maintaining drive. The fine mineral side expresses itself perfectly in this balance.

- For minutes, the dark floral side resonates, accompanied by the various herbal notes – an impressive, multi-layered aftertaste that underscores the quality of this wine.
- Terroir & Origin
- The vineyard site Pajoré in Treiso, located north of the town, offers south-westerly exposure and is home to 75-year-old vines planted at high density. Since the 1970s, Sottimano has farmed this site organically – a commitment to sustainable viticulture with long-term perspective.
- Grape Variety & Vinification
- 100% Nebbiolo, destemmed and fermented on the skins for up to 60 days – an exceptionally long maceration period. Regular punching down of the cap in open stainless steel fermentation vessels. Since 2020, ageing takes place in large, slightly conical botti for around 24 months – a traditional method that prioritises elegance over extraction.
