Wine Description for Barbaresco Starderi DOCG 2021 1500ml Magnum by Olek Bondonio
- Colour & Appearance
- Transparent luminous ruby red with classic Nebbiolo clarity – a wine that reveals its origins already in the glass.
- Nose
- Elegant restraint rather than loud expressiveness: dried flowers and herbs open the bouquet, followed by black cherries, forest floor and damp earth. These are joined by liquorice, fermented cardamom, black tea and a note of dark tobacco. Everything is finely interwoven – not opulent, but compelling and of striking finesse.
- Palate
- Here the true class of this Barbaresco reveals itself: juicy and silky with fine tannin structure that never becomes obtrusive. The crystal-clear acidity carries layers of dark and red berry fruit, partly dried, and lends the wine remarkable transparency. Presence and balance are excellent – a classically styled Nebbiolo that, despite its youth, is already accessible now without surrendering its ageing potential.
- Finish
- Persistent and harmonious with fine tannin structure that lingers long. The fruit remains present, framed by earthy notes and refreshing minerality.
- Terroir & Origin
- From a small parcel in Starderi, the northernmost municipality of Neive. The 40-year-old vines are rooted in softer, more clayey soils than elsewhere in the region – less marl, less exposure. Olek Bondonio leased these steep slopes from an elderly couple who could no longer manage the demanding cultivation.
- Grape Variety & Vinification
- 100% Nebbiolo, fermented in concrete with two months of skin contact and submerged cap management. Gentle pressing on the basket press, followed by at least two years of maturation in large wooden vats. Bottled unfiltered and unfined with minimal sulphur content (approximately 40 mg) – artisanal purity in its purest form.
- Food Pairing Suggestions
- Brasato al Barolo, Ossobuco alla milanese, Tagliatelle with porcini mushrooms, aged Parmigiano Reggiano or Castelmagno, game dishes such as venison loin with juniper.
- Special Features
- The magnum bottle promises optimal ageing conditions. A Barbaresco that unites tradition and drinking pleasure – authentic, transparent and from a winemaker who places respect for terroir above showmanship.
