- Terroir & Origin
- The vineyard site La Rochelle lies west of the village centre of Moulin-à-Vent on deep weathered granite. From a total of 19 hectares, the Chastels cultivate 2.3 hectares with vines of around 50 years old, yielding modest 25-35 hl/ha – concentration through natural yield reduction.
- Grape Variety & Vinification
- Gamay Noir à Jus Blanc, hand-harvested and sorted. Vinification took place with whole bunches in concrete vats: undamaged berries formed the base, crushed berries the upper layer – a semi-carbonic maceration lasting around 15 days. Ageing continued for one year in used wooden barrels, which gives the wine structure without obtrusive oak notes.

- Excellent with roasted chicken with harissa and lemon, tacos or Comté polenta with roasted Jerusalem artichoke and Eggs Benedict. The wine’s versatility harmonises equally well with grilled salmon or mushroom dishes.
