Wine Description for Monte Tabor Amarone della Valpolicella DOCG 2016 by Fidora

Character
The Monte Tabor Amarone della Valpolicella DOCG 2016 embodies the concentrated power of a classic Amarone. With 16% alcohol, it displays the characteristic opulence of this Venetian speciality, created through the traditional Appassimento process – that centuries-old technique of drying grapes on straw mats or in wooden crates. The result is a wine of impressive density and complexity, presenting the essence of Valpolicella in concentrated form.
Terroir & Origin
The Valpolicella region northwest of Verona boasts a long winemaking tradition, where calcareous soils and the mild climate between Lake Garda and the Lessini Mountains create ideal conditions. The elevated sites between 200 and 450 metres provide pronounced day-night temperature fluctuations that give the grapes structure and aromatic depth. The 2016 vintage is considered well-balanced and harmonious, with good ripeness and natural acidity structure.
Grape Variety & Vinification
The classic Amarone blend of Corvina, Corvinone and Rondinella follows the region’s traditional assemblage. Corvina provides the backbone with its structure and cherry fruit, Corvinone brings body and ageing potential, whilst Rondinella contributes floral notes and finesse. After several months of drying, the grapes lose approximately 40% of their weight – the remaining berries are pure concentration. The extended maceration time and maturation in wood shape a wine of impressive complexity that, despite its fullness, never feels heavy-handed.
Food Pairing Suggestions
A wine for special occasions and bold flavours: Brasato al Barolo, Ossobuco alla Milanese or aged Parmigiano Reggiano are classic partners. It also harmonises beautifully with game dishes, braised beef or robust hard cheeses. The subtle residual sweetness makes it an intriguing companion to dark chocolate or nut pastries.
