Klaus and Maj Britt Vorgrimmler cultivate 3.2 hectares on the sun-drenched southern tip of the Tuniberg near Freiburg. The Weingut Klaus Vorgrimmler has farmed organically since 1985 and has been certified according to the EU organic regulation since 2025. On the fertile loess soils, 65 per cent is Spätburgunder, complemented by Weißburgunder, Grauburgunder and Chardonnay. The winemaking couple follows the lunar phases according to Maria Thun and strengthens their soils with alfalfa, buckwheat and various types of clover. The grapes are hand-harvested and fermented with wild yeasts from their own vineyards. As a demonstration estate for the Federal Ministry, they show how biodynamic agriculture enriches both wine and the environment alike.

More about Klaus Vorgrimmler
Biodynamics according to the lunar phases
Klaus and Maj Britt Vorgrimmler align all their vineyard work with Maria Thun’s biodynamic calendar. They are among the pioneers of the biodynamic movement in Baden. Instead of synthetic fertilisers, they rely on soil-strengthening plants such as alfalfa, buckwheat and various types of clover growing between the rows of vines. This green manure supplies the fertile loess soil with nutrients and promotes soil life. Their Spätburgunder benefit from this intensive work in the soil and develop a remarkable minerality. The Pinot Noir "Dachs" 2022 exemplifies how biodynamic practices enhance the expression of terroir.

Hand-harvesting and wild yeasts on the Tuniberg
The exposed position at the southern tip of the Tuniberg provides the Vorgrimmlers with optimal conditions for their Burgundy varieties. The warming loess soil stores the sun’s heat and lends the wines their characteristic power and finesse. All grapes are hand-harvested and gently processed. For the red wines, Klaus Vorgrimmler practises open-top fermentation, while the natural yeast flora of his own vineyards carries out the fermentation. He shares this traditional method with other top winemakers in the region, such as Franz Keller, who likewise relies on the power of wild yeasts. The elegant Nemochet 2023 made from Chardonnay shows how this natural fermentation highlights the character of the grape variety.
A demonstration estate for ecological diversity
As a demonstration estate of the Federal Ministry of Consumer Protection, Food and Agriculture, the winery opens its doors to anyone interested. Klaus and Maj Britt Vorgrimmler offer vineyard walks in English as well, explaining their methods of organic farming. Promoting insect diversity is particularly close to the couple’s hearts – between the rows of vines there is humming and buzzing all year round. This living biodiversity is also reflected in their wines. The Pinot Blanc de Noir 2024, a white wine made from immediately pressed Spätburgunder grapes, embodies this vitality with its restrained elegance and mineral precision. With just 3.2 hectares under vine, the Vorgrimmlers impressively prove that quality comes before quantity.
