- Luminous lemon yellow with golden reflections and characteristic light cloudiness – a hallmark of natural, unadorned vinification.
- Nose
- This Pinot Blanc presents itself with beguiling coolness and ethereal character. Lemon balm and lemon thyme dominate initially, accompanied by mint. Beneath unfolds a multifaceted yeasty note of pastry and Tarte Tatin, which harmonises elegantly with the fruit. Baked apple, Nashi pear and honeydew melon are accentuated by a whisper of grapefruit and bergamot. Remarkable are the deep, vegetal notes of fennel and pea – both the vegetable itself and its green shoots.
- Palate
- Knife-sharp and linear, this wine cuts its path between fruit and texture. Still young and exuberant, it merely hints at its considerable ageing potential. Chalky and crystalline in its structure, racy and precise in its direction. Cold smoke and fine spice traverse the palate. The fruit remains discreetly in the background, whilst the vibrant acidity shatters any hint of pleasantness – a tension-laden interplay between elegance and energy.

- Long, mineral and characterised by persistent freshness. The acidity carries far and leaves a saline, almost maritime aftertaste.
- Terroir & Origin
- The vines are rooted in loess soils over Dogger and Jurassic limestone from the Middle Jurassic period. The fertile loess has been cultivated for 40 years, the soils remain untilled and harbour over 80 plant species – a living ecosystem that shapes the wine’s structure and complexity.
- Grape Variety & Vinification
- Consistently nature-aligned viticulture with the innovative KV cut, which limits yields to 30-40 hl/ha. No sulphur in the vineyard, only minimal copper and baking powder applications. Following early harvest and natural sedimentation, fermentation occurs at 18°C in stainless steel tank without any additives. Spontaneous fermentation with indigenous yeast, malolactic fermentation, maturation on fine lees. Sulphur added only once before bottling – the absolute minimum.

- This radical Pinot Blanc demands equally clear flavours: scallops with fennel foam, pike-perch on pea purée, asparagus with Hollandaise sauce, goat’s cheese of medium age or pan-fried oyster mushrooms with herbs.
