- Hand-picked Pinot Noir from 60-year-old vines. Partial destemming, spontaneous fermentation in stainless steel with pigeage and remontage. Maturation over ten to twelve months in a blend of 228-, 350- and 500-litre barrels as well as tonneaux – a maximum of 10% new wood annually. Minimal sulphiting (≤ 50 mg/l) only at bottling. Craftsmanlike, precise, without frills.
