Colour & Appearance
Quite transparent purplish-red – typical of an elegant, non-extracted Pinot Noir from Burgundy.
Nose
Restrained and shy on the nose, even after decanting the wine remains discreet. Fine notes of cherry, raspberry and plum are accompanied by lightly warm pastry and a hint of hand-warm peat. A Pinot Noir that doesn’t shout, but demands patience.
Palate
Here the true character of the Sous Roche reveals itself: smooth, sensual and noticeably more open than on the nose. The fruit appears ripe, in places still pleasantly crisp with accents of sour cherries. A subtle extract sweetness lends fullness to the otherwise dry wine, whilst clear structure and clarity characterise the palate. The tannin is firm yet ripe and well-integrated, the acidity clear and precise. Slightly earthy and herbal-spicy on the finish – a gripping, authentic Burgundy.
Terroir & Origin
The vineyard site Sous Roche lies in the eastern area of Saint-Romain at 350 metres altitude with easterly exposure. The limestone soil (Calcosol sur marne de Saint-Romain) and 60-year-old vines lend the wine depth and mineral precision.
Grape Variety & Vinification
Pinot Noir, hand-picked and partially destemmed. Spontaneous fermentation in stainless steel with pigeage and remontage, spontaneous malolactic fermentation. Maturation over 10–12 months in 228-, 350- and 500-litre barrels as well as tonneaux (max. 10% new wood). Bentonite fining, only coarse filtration, minimal sulphiting (40–50 mg/l total SO₂) only at bottling. Crafted with precision, natural winemaking approach.
Food Pairing Suggestions
Pairs excellently with Coq au Vin, duck breast with cherry sauce, braised veal ragout or ripe soft cheeses such as Époisses or Chaource. Also an excellent choice with mushroom dishes and autumnal game terrines.
