Colour & Appearance
Rather transparent purplish-red – typical of a craftsman-made Burgundy that prioritises elegance over opacity.
Nose
Restrained, almost shy – even after decanting, this wine remains a quiet storyteller. Those who listen carefully will detect delicate notes of cherry, raspberry and plum, underpinned by a hint of warm puff pastry and hand-warm peat. No loud entrance, but an honest one.
Palate
Here the wine opens up and reveals a smooth, almost sensual texture. The fruit appears ripe, with pleasantly crisp hints of sour cherry. A subtle trace of extract sweetness gives this otherwise dry Pinot Noir depth without compromising the clear structure. The tannins are firm and ripe, the acidity precise and invigorating – plus a slightly earthy, herbal-spicy note that unmistakably characterises Saint-Romain.
Finish
Medium length, gripping and clear. No extravagances, but an honest, clean finish with mineral presence that makes you want the next sip.
Terroir & Origin
The vineyard site Sous Roche lies in the eastern part of the Saint-Romain appellation at 350 metres altitude – unusually high for Burgundy. The characteristic Calcosol sur marne de Saint-Romain, a lime-rich marl soil, gives the wine its mineral tension and cool spiciness. Not a glamorous terroir, but an honest one.
Grape Variety & Vinification
Hand-picked Pinot Noir from 60-year-old vines. Partial destemming, spontaneous fermentation in stainless steel with pigeage and remontage. Maturation over ten to twelve months in a blend of 228-, 350- and 500-litre barrels as well as tonneaux – a maximum of 10% new wood annually. Minimal sulphiting (≤ 50 mg/l) only at bottling. Craftsmanlike, precise, without frills.
Food Pairing Suggestions
An ideal companion to Coq au vin, grilled lamb rack with Provençal herbs or a classic Bœuf bourguignon. Also a tempting match with mushroom risotto or a mature Époisses.
Special Features
