- Colour & Appearance
- Pale platinum with brilliant clarity – an Aligoté that reveals its Burgundian origin and the cool minerality of the limestone soil right in the glass.
- Nose
- Precise and restrained elegance: lemon and lemon zest dominate, accompanied by greengage and green apples. Beneath lies a fascinating nutty component with hints of tahini, lending the wine depth and complexity. Fresh, firm, with a touch of tannin – unusual for a white wine, but characteristic of this style.
- Palate
- Here the true class reveals itself: mineral, mouth-watering salty with electric tension. The fruit remains precise and restrained – again citrus, greengage and apple. To this are added iodine and flint, reminiscent of the great Chablis. The „crunch“ on the palate is remarkable: it practically crackles, a subtle yeast sweetness lends texture, before the wine runs bone-dry and with vibrant acidity down the throat.
- Finish
- Long, salty-mineral with lingering citrus freshness. The stony minerality resonates and leaves the mouth refreshed and eager for the next sip.
- Terroir & Origin
- The vineyard site Pierre Percée lies on limestone subsoil with marl and clay – classic Burgundian terroir. The vines planted in 1978 stand high on the slope, which provides good drainage and coolness. You can practically taste the stones.
- Grape Variety & Vinification
- Aligoté, Burgundy’s underrated second white grape variety, here vinified with respect: maturation on full lees in used barrels with minimal new wood, only coarse filtration, minimal sulphur (40-50 mg/l). Frédéric Buisson tasted daily and racked the barrels individually – pure artisanal precision.
- Food Pairing Suggestions
- Oysters, scallops, ceviche, goat’s cheese or simply Comté. The salty minerality calls out for seafood, but trout with almond butter or Poulet de Bresse with lemon would also be perfect partners.
- Special Features
- 2022 is the first year this wine has been bottled – previously sold only as barrel wine. An Aligoté that demonstrates this grape variety can do far more than serve as the base for Kir. Here the terroir speaks with Burgundian clarity.
