Wine Description for Grauer Burgunder Trocken 2025 by Ökonomierat Rebholz

Character
Ökonomierat Rebholz ranks among the most renowned wine estates in the Palatinate and has proven over decades that Pinot Gris can be far more than a pleasant everyday wine. This dry Grauer Burgunder embodies the precise, terroir-focused signature of the house: clearly structured, with substance and a minerality that speaks of the distinctive soils of southern Palatinate. The Rebholz family has worked for generations with uncompromising quality orientation and a deep understanding of their vineyard sites.
Terroir & Origin
The estate in Siebeldingen manages some of the finest vineyard sites in southern Palatinate, characterised by Buntsandstein, limestone and shell limestone. This geological diversity gives the wines their characteristic minerality and tension. The mild, Mediterranean-influenced climate of the region allows for a long, physiologically complete ripening whilst retaining freshness – a balance that is crucial for Pinot Gris. The soils store warmth and water optimally, providing the vines with stability even in dry years.
Grape Variety & Vinification
Pinot Gris shows its full potential at Rebholz: the variety is cultivated here not for opulent fruitiness, but for structure, depth and ageing potential. Vineyard work follows biodynamic principles, with low yields and selective hand-harvesting. In the cellar, restrained intervention dominates – spontaneous fermentation, ageing on fine lees, often in traditional wooden Fuders. The result is a Grauer Burgunder with grip and texture, which redefines the variety and is far removed from arbitrary mass production.
Food Pairing Suggestions
A versatile companion to pan-fried char, veal brisket or mushroom dishes. The wine’s structure harmonises beautifully with creamy risotto, poultry in light sauce or mature Comté. Also an exciting choice with Asian cuisine of moderate spiciness.
