Wine description for Sparkling Wine „Pi“ No. Cuvée XII Extra Brut by Ökonomierat Rebholz

Character
The „Pi“ No. Cuvée XII Extra Brut is a sparkling wine that encapsulates the philosophy of Ökonomierat Rebholz: uncompromising quality, intellectual curiosity and a deep respect for origin. The name „Pi“ – the irrational, infinite number – is programmatic: a sparkling wine that defies simple categorisation and constantly strives for precision. With an Extra Brut dosage, it remains deliberately dry and clear, without any concession to accessibility. This is not a sparkling wine for the habitual aperitif, but one that demands attention.
Terroir & Origin
The Palatinate is regarded as one of Germany’s warmest and sunniest wine regions, yet the Rebholz estate in Siebeldingen at the southern edge of the appellation demonstrates that warmth and finesse need not be contradictory. The soils around the Birkweiler Kastanienbusch – buntsandstone, muschelkalk and basalt – lend the estate’s wines a mineral tension and depth that far transcends the cliché of opulent Palatinate. This complex terroir forms the foundation for „Pi“ as well.
Grape Variety & Vinification
Vinified from Pinot Noir (Spätburgunder), this sparkling wine draws from a grape variety that has long achieved world-class standards in the Palatinate. The traditional bottle fermentation, as one would expect from a sparkling wine of this ambition, lends „Pi“ structure, depth and a fine yeast character. The twelfth cuvée – indicated by the Roman numeral XII – speaks to a continuous engagement with this style over many years: artisanal maturity that manifests itself in every bottle.
Food Pairing Recommendations
The bone-dry character and the varietal elegance of Pinot Noir make „Pi“ an ideal table companion. Recommended with oysters and fine seafood platters, equally harmonious with scallops with pea purée or goat’s cheese variations. For the more adventurous, serve it with grilled salmon or pale veal sweetbreads – dishes that appreciate its structural depth.
