Blanc de blancs is the purest expression of Chardonnay in Champagne
Blanc de blancs is made exclusively from white grapes, in practice almost always from Chardonnay alone. Its home is the Côte des Blancs, where the vines grow on pure chalk; the Côte des Bar also produces remarkable examples. In the glass the wines show citrus fruit and chalk, brioche and nut arrive with maturity, and their high acidity carries them for years.
The selection concentrates on the Côte des Blancs, complemented by wines from the Côte des Bar; all the growers work organically or biodynamically, and estates such as Larmandier-Bernier have long stood for this approach. Well chilled, these Champagnes go with oysters, fish and goat’s cheese.
