Sophie and Pierre Larmandier are among the earliest protagonists of organic and biodynamic houses in Champagne. Since 1988, they have been running the house, which today has around 15 hectares, mainly in Vertus, Oger, Avize, Cramant and Chouilly. In 2004, they converted the farm to biodynamics, but left the growers' association because it was too static for them. Nevertheless, their winery is certified organic. What Sophie creates in the cellar is Blanc de Blancs in pure culture with an absolutely clear and precise handwriting. The vines, which are up to 90 years old, are particularly helpful. Larmandier-Bernier ferments and vinifies the wines in tonneaux and in Stockinger barrels. A light stirring of the yeast ensures a round mouthfeel despite the strong minerality that their wines possess.
