Tasting note
Colour & Appearance
Radiant, cool yellow with a silky sheen and an ethereal, delicate, floating perlage, such as only matures in the grand format of a Magnum.
Nose
A puristic opening brimming with tension. Aromas of green apple, lemon zest and white chalk emerge, underpinned by the finest brioche notes and a subtle oxidative nuance that lends the wine an intellectual depth.
Palate
On the palate, the wine presents itself steel-hard, focused and unadorned. The grippy acidity meets a dense, creamy texture resulting from extended lees ageing. A bone-dry mouthfeel full of energy, which masterfully translates the cool chalk soil of Chouilly.
Finish
Razor-sharp, extremely long and packed with salty minerality. The finish lingers for minutes, leaving an impression of boisterous freshness and uncompromising purity.
Terroir & Origin
From the single vineyard site Derrière le Mont Aigu in Chouilly, one of the most renowned Grand Cru villages of the Côte des Blancs. The deep chalk soils are responsible for the penetrating, cool tension of this terroir.
Grape Variety & Vinification
100% Chardonnay from the 2015 harvest. Hand-picked and vinified plot by plot. Aged in stainless steel as well as, depending on the parcel, in oak or sandstone amphorae. Consistently low dosage as an Extra Brut and traditionally riddling by hand.
Food Pairings
Perfect with oysters, scallops or scallop sashimi. Equally impressive alongside Ibérico ham.
Particularities
The impressive Magnum format ensures a particularly slow maturation. A radically unpretentious single-vineyard Champagne from the grower movement, seeking the purest expression of its terroir.
