In the glass
Colour
Pale, almost silvery yellow with a fine mousse.
Nose
Intense aromas of Amalfi and citron lemons, grapefruit and lemongrass, underpinned by subtle pineapple, hints of lemon curd as well as notes of wood and limestone.
Palate
Powerful, intense and mineral with great grip, featuring refreshing citrus flavours, tart zest and a saline, mouth-watering finish.
Character
A linear, unadorned sparkling wine without dosage which, despite its clarity, reveals a surprisingly creamy richness thanks to the ripeness of the fruit.
Pairing
Pairs beautifully with Queen’s pâté, home-cured salmon with dill and mustard, or a creamy morel risotto.
Notes
Biodynamically produced pure Chardonnay from the flint and chalk soils of the Côte des Petit Morin, spontaneously fermented, aged in wood and disgorged entirely without dosage.
Tasting note
Colour & appearance
Pale, almost silvery yellow with a fine, lively mousse.
Nose
Highly focused and multi-layered: intense citrus notes of Amalfi and citron lemons, grapefruit and lemongrass intertwine with hints of lemon curd and candied lemon zest. Subtle tones of pineapple, star fruit, delicate wood and the finest limestone lend depth.
Palate
Intense, gripping and powerfully structured. Taut citrus freshness and tart zest notes meet a creamy texture. Despite the complete absence of dosage, this Blanc de Blancs – thanks to fully ripe fruit – shows no austerity whatsoever, but is wonderfully precise and incisively mineral.
Finish
A long, mouth-watering finale sustained by pronounced, saline minerality.
Terroir & origin
Sourced from the Les Vignes Douces plot within the Les Coteaux du Petit Morin terroir on the southern edge of the Côte des Blancs. The complex soil is characterised by white marl (Marnes Blanches), chalk, flint and distinctive millstone (Meulière).
Grape variety & vinification
100% Chardonnay from vines averaging 40 years old, drawn entirely from the 2019 harvest (V19). The grapes were pressed by hand and fermented spontaneously. Maturation took place in oak. In November 2022, the Champagne was disgorged without any addition of dosage (0 g/l).
Food recommendations
Excellent with classic chicken vol-au-vent, home-cured salmon with dill and mustard or a creamy morel risotto.
Special features
Cyril Jeaunaux works consistently according to biodynamic principles. This profoundly terroir-driven purist impressively demonstrates the chalky elegance and mineral depth that Chardonnay can develop on the marl- and flint-rich soils of the Petit Morin valley.
