Tasting note
Colour & Appearance
Luminous golden yellow with delicate green reflections, fine, persistent mousse – in the magnum bottle, this Champagne matures more slowly and develops a particular depth and elegance.
Nose
Inviting and multi-layered: citrus fruits, nectarine and dried stone fruit combine with seductive notes of brioche, roasted hazelnuts and toast. A hint of fresh highland coffee, fennel and chamomile rounds this out – classical and opulent in equal measure.
Palate
What the nose promises, the palate delivers in full. The house’s characteristic method of regularly stirring the yeast during barrel ageing gives this Blanc de Blancs a creamy, almost silky texture – without sacrificing freshness or precision. The balance between mature honey, toast and soft stone fruit on one hand and the cool, almost saline minerality of the Côte des Blancs on the other is simply masterful.
Finish
Long, fresh and characterised by fine chalk minerality. The Extra Brut dosage allows the acidity to emerge elegantly and delivers a dry, invigorating conclusion with a lingering aftertaste.
Terroir & Origin
Exclusively from Grand Cru vineyard sites in Champagne – the grapes come from the finest hills of the Côte des Blancs, that limestone-rich strip which gives Champagne’s Chardonnay its unmistakable grandeur.
Grape Variety & Vinification
100 % Chardonnay, with a reserve portion of at least 25 % for complexity and depth. Barrel ageing with regular yeast stirring – a craftsmanship-intensive approach that makes De Sousa one of Champagne’s most exciting independent producers.
Food Pairing Suggestions
Ideal with wild prawns with carrots, cinnamon and Yirgacheffe coffee jus, where the wine’s coffee notes resonate brilliantly. Equally convincing with saithe with beurre blanc and Sichuan pepper or the opulent calf’s sweetbread with turnip and mild Indian curry.
Special Features
The magnum bottle (1500 ml) is the ideal ageing vessel for Champagne: slower development, finer mousse, greater complexity. This De Sousa is a prime example of what a dedicated grower-producer can achieve – and why the major houses no longer have the final word.
