Tasting note
Character
Chablis stands like no other white wine in the world for mineral purity and cool austerity – a wine that does not hide its origins, but celebrates them. The Chablis AOC from de l’Enclos embodies this spirit in the generous magnum bottle, which is not merely a statement, but allows the wine a slower, more elegant maturation. Vinified dry and focused on the essential, this is a wine for people who understand wine as an expression of place.
Terroir & Origin
Chablis lies in the northernmost corner of Burgundy, far removed from the Côte d’Or, and owes its distinctive character to the famous Kimmeridge limestone – an ancient seabed rock threaded through with fossilised oyster shells. This Kimmeridgian terroir lends the wines an almost saline, iodine-tinged minerality that is found nowhere else in the world with such pronounced expression. The continental climate with cold winters and warm summers keeps the acidity vibrant and gives the wine tension and freshness.
Grape Variety & Vinification
Only Chardonnay is permitted in Chablis – here, however, in its leanest, most unadorned form. Classically made, typically without new oak, the Chardonnay in this northern vineyard site reveals its cool, linear side: no richness, no warmth, but precision and length. The magnum bottle protects the wine from premature oxidation and creates ideal conditions for harmonious development over the coming years.
Food Pairing Recommendations
A classic companion to oysters – a pairing that is almost geological in nature, as both spring from the same ancient seabed. Equally recommended with grilled turbot, scallops with lemon butter, ceviche or simple goat’s cheese. The magnum makes this wine an ideal choice for a festive table where elegance and provenance take centre stage.
