Tasting note
Character
A classic Chablis from the young vintage 2024, embodying the cool precision and mineral clarity for which this northernmost appellation of Burgundy is renowned. Domaine de l’Enclos interprets authentic Chablis style with “Le 2024”: unadorned, straightforward and marked by stony elegance. Here Chardonnay reveals itself in its most purist form, far removed from opulent fruit.
Terroir & Origin
Chablis lies isolated in the Yonne département, approximately 100 kilometres north-west of Beaune. The continental climate with cool temperatures and the famous Kimmeridgian limestone soils – interspersed with fossilised oyster shells from the Jurassic period – lend the wines their characteristic tension. These ancient marine deposits are the secret behind that saline minerality and stony freshness that distinguishes Chablis from all other Chardonnay regions. In 2024, adverse weather hit the vineyards so hard that only a single cuvée was produced, uniting all the terroirs on the right bank of the Serein.
Grape Variety & Vinification
Chardonnay reveals its cool, northern temperament in Chablis: restrained, taut, with notes of green apple, citrus fruits and white flowers. The wine was aged for 16 months in a single 450-litre cask, to preserve the purity of fruit and terroir typicity. No oak aromas should overlay the crystalline clarity – here it is about the expression of place and soil, not oenological disguise.
Food Pairing Recommendations
A Chablis of this kind is the classic companion to oysters and seafood, but also to goat’s cheese, poached fish or poultry in cream sauce. The saline minerality harmonises beautifully with scallops, ceviche or sushi. Also a regional given with Escargots à la Bourguignonne.
