Wine description for Bourgogne Aligoté AOC 2023 by Thomas-Collardot

Character
An unadorned, crystal-clear white wine that impresses with bright citrus fruit, fine citrus zest and a noticeably chalky-salty finish. Jacqueline Collardot and her son Matthieu forgo any form of baroque richness or cosmetic oak makeup. The result is an honest, taut structure with just 12.0% ABV that dispenses with any icing sugar and instead reveals the pure, cool core of the grape.
Terroir & Origin
Shaped by the prestigious address in Puligny-Montrachet, this wine demonstrates just how much individuality the terroir of the Côte de Beaune can produce beyond Chardonnay. The limestone-rich soils lend the wine a fine grain and that delicate mineral drive, bringing the region’s microclimate and stony subsoil unadulterated into the glass.
Grape Variety & Vinification
The traditional Burgundy grape Aligoté is treated at Thomas-Collardot with the same meticulous care as the house’s great vineyard sites. Following gentle pressing and sedimentation, the wine matures on its fine lees in rounded casks in the cellar. The approach, which has been certified organic since 2021, along with the minimal addition of sulphur and the avoidance of fining, guarantees an artisanal wine of unadulterated transparency.
Food Pairings
Thanks to its straightforward freshness and salty finish, this dry Aligoté is an ideal match for oysters, seafood or sashimi. It also provides an invigorating counterpoint at the table to classic regional cuisine such as Jambon persillé or creamy goat’s cheese.
