Jacqueline and Matthieu Collardot - Domaine Thomas-Collardot, Puligny-Montrachet

Quiet confidence is the hallmark of Domaine Thomas-Collardot: a family estate of just 2.5 hectares in the heart of Puligny-Montrachet, run by Jacqueline Collardot and her son Matthieu. They've been vinifying their own wines since 2015 – before that, the grapes went to négociants. What emerges from this small cellar is Chardonnay without make-up: saline, taut, with precise citrus fruit and fine chalky texture. The parcels in Les Enseignères, Les Nosroyes and Hameau de Blagny (1er Cru) speak for themselves. Craftsmanship over spectacle – and bottles that disappear quickly amongst those in the know.

Small, Focused, Understated

The story of Domaine Thomas-Collardot actually begins with Jacqueline's grandfathers: Henri Chavy and Maurice Thomas owned the vines that now form the heart of the estate. Pierre Thomas, Jacqueline's father, farmed them until 1992 – then they were leased to cousins. In 2010, Jacqueline Collardot brought the vineyards back, completed training at CFPPA Beaune, and bottled her first vintage in 2015. Her son Matthieu joined in 2018. Together they cultivate a style that has become rare in Puligny-Montrachet: transparency over opulence, precision over breadth.

Pièces, Lees, Time

In the cellar, the principle of the gentle hand prevails: soft pressing, 24 hours of sedimentation, maturation in used 228-litre barrels (two to four previous fills). Bourgogne wines age for ten months on fine lees, Village and Premier Cru for sixteen. Filtration is light only, fining not at all. The result is Chardonnays with fine texture and an invariably dry, saline pull – no buttered toast, no vanilla clouds. Since 2021, the estate has been organic certified, and sulphur additions are largely avoided. Annual production stands at around 10,000 bottles.

The Bourgogne Aligoté 2023 shows how seriously the foundation is taken here: pale, taut, with citrus zest and a chalky-saline finish. The Bourgogne Hautes-Côtes de Beaune blanc 2023 brings altitude into play – cool herbs, lime peel, razor-sharp freshness. And the Crémant de Bourgogne Brut Blanc 2022 underlines the Collardot signature in sparkling form: fine mousse, clear citrus fruit, zero icing sugar.

Kindred Spirits on the Côte de Beaune

Those who appreciate Thomas-Collardot will find similar straightforwardness at Boris Champy – also Côte de Beaune, also an advocate of transparency and controlled power.
