- Intense straw yellow with lively, delicate bubbles – a Champagne that already promises energy and substance in the glass.
- Nose
- Open, inviting and of remarkable complexity: marzipan and patisserie meet the zesty freshness of kumquats, grapefruits and Meyer lemons. In the background, elegant notes of blonde tobacco, graphite and cool limestone resonate – finely spiced, sensual and precise all at once.
- Palate
- On the palate, Cyril Bonnet’s unmistakable signature reveals itself: a deliberate, carefully calculated hint of oxidation, expressed in notes of russet apples with skin, underpinned by herbal-zesty and tobacco-spiced accents. At the same time, the wine surprises with a creamy, silky texture and considerable juiciness. Despite the complete absence of dosage, it displays a smooth extract sweetness and a subtle, warm note of hand-warm toast.
- Finish
- Long, saline and carried by lively minerality. A subtle salt note in the finale enhances the drinking flow and lends the Champagne an extraordinary balance and presence – the finish simply demands the next glass.
- Terroir & Origin
- The grapes come from three individual vineyard sites of the Premier Cru village Chamery: Les Vigneules, Les Spectres and Les Caquerets, all with south-easterly slope exposure. The chalky clay soil with embedded limestone pebbles and a fossil, shell-rich subsoil characterise the pronounced minerality and freshness of this Champagne.
- Grape Variety & Vinification
- A blend of 45% Pinot Noir, 40% Chardonnay and 15% Meunier. The base wine (Cœur de Cuvée) underwent spontaneous fermentation and was aged for nine months in four-year-old 228- and 400-litre barrels. Biological acid reduction, no sulphur addition, no dosage – a consistently natural approach that brings the character of the terroir unfiltered into the bottle. Bottled 05/2023, disgorged 09/2025.
- Food Pairing Suggestions
- Ideal with oysters and seafood, aged Comté or Parmesan, white truffle, calf’s sweetbread or simply with a selection of fine charcuterie. The saline minerality and creamy texture also make it an ideal companion for sushi and sashimi.
