Wine Description for Les Volies Brut Nature 2017 by Barrat-Masson

Colour & Appearance
Pale golden yellow with fine, delicate bubbles – a visual testament to the 36-month ageing on lees and the natural maturation of this Champagne.
Nose
The bouquet reveals a fascinating balance between fruit and maturation: apricots, peaches and yellow apples meet ripe citron lemons. The complete maturation in Demi-Muids shows itself subtly, yet present through notes of nuts, marzipan and fine wood – never dominant, always integrated.
Palate
On the palate, Les Volies unfolds its full class: deep, powerful and yet of remarkable elegance and finesse. The combination of stone fruit, citric freshness and marzipan is carried by lightly roasted nuts and a subtle wood influence. The 36 months on lees lend the Champagne complexity and structure. This is a Champagne at the beginning of its development – a wine with considerable ageing potential.
Finish
Long and precise, with fine minerality and a refreshing acidity structure that underscores the Brut Nature character.
Terroir & Origin
The Chardonnay (80%) comes from chalk soils with clay overlay, the Pinot Noir from more clayey soils with chalk and limestone subsoil. The vines, approximately 40 years old, have been ECOCERT-certified since 2012 and were harvested at a yield of 60 hl/ha.
Grape Variety & Vinification
A cuvée of 50% Chardonnay and Pinot Noir each (75% vintage 2018, 25% 2017). Only Cœur de Cuvée used, spontaneously fermented and aged nine months in 600-litre Demi-Muids. Hand-disgorged, without dosage – a purist approach that lets the origin speak for itself.
