Character
An intellectual, purist sparkling wine that bears the signature of an uncompromising craftsman. Bottled as a Brut Nature without any dosage, this Champagne presents itself wonderfully unadorned, energetic and with a gripping, vibrant freshness. It eschews superficial richness, opting instead for a fine-grained texture, structure and a fascinating, austere independence that challenges and simultaneously delights the palate.
Terroir & Origin
The grapes originate from the Premier Cru sites of Coulommes-la-Montagne in the heart of the Petite Montagne de Reims. This growing region is characterised by a cool, damp and harsh microclimate as well as calcareous soils. Under the biodynamic management of Jean Servagnat, this wine translates the cool terroir of the region into a taut, chalky texture and a vibrating vitality in the glass.
Grape Variety & Vinification
The cuvée combines the classic grape varieties of Champagne: Pinot Meunier, Chardonnay and Pinot Noir. As a micro-winemaker, Servagnat works with minimal intervention in the cellar. The grapes are harvested by hand, spontaneously fermented with wild yeasts and bottled without filtration. The result is an unadulterated, artisanal masterpiece of the 2016 vintage, which combines the typical spice of the Meunier portion with the elegance of Chardonnay and the structure of Pinot Noir.
Food Pairings
This purist Champagne demands a purist cuisine. It is an excellent partner for fresh oysters, wild turbot sashimi or paper-thinly sliced Lardo. Its lively acidity also cuts perfectly through the rich texture of crispy pork belly or matured Pata Negra ham.
