- Pure Pinot Noir, completely destemmed and spontaneously fermented following a cool pre-fermentation. Ageing takes place over 18 months in 228-litre barriques – predominantly from François Frères – with an ambitious new oak proportion of 50 to 75 %. A classical, artisanal approach that sets fruit and wood in dialogue.
