Wine description for Tonsur 2024 by Pranzegg
- Character
- The Tonsur 2024 is a fascinating counter-concept to the crowd-pleasing, mass-produced wines of Alto Adige. At just 11.5% abv, this dry white wine presents itself as wonderfully light-hearted, vibrant and driven by a gripping drinkability. It deliberately eschews superficial, loud fruit, showing instead a fine, herbal spice, cool freshness and a subtle structure that perfectly captures the spirit of Martin Gojer’s non-conformist winemaking.
- Terroir & Origin
- The grapes come from extreme steep slopes high above Bolzano, located on the Kohlerer Berg and the Ritten. Characterised by a cool north-west exposure, shady forests and nocturnal downdrafts, the vines here ripen more slowly. The volcanic soils of porphyry, basalt and granite bestow a tense, almost wiry energy and a fine, salty texture upon the wine, which stands in stark contrast to the warmth of the valley basin.
- Grape Variety & Vinification
- This white blend combines Pinot Blanc, Müller-Thurgau and Silvaner, grown on traditional, shade-giving pergola systems. In the cellar of Pranzegg, the principle of controlled non-intervention reigns supreme: fermentation occurs spontaneously with wild yeasts, followed by a long maturation on the full lees in concrete and used wooden casks. The wine is bottled unfined and unfiltered with only a minimal addition of sulphur.
- Food Pairings
- This lively, structured white wine demands honest, artisanal cuisine. It pairs brilliantly with South Tyrolean Schlutzkrapfen (spinach and ricotta ravioli) with brown butter and sage, a delicate chive omelette, wild-caught freshwater fish or simply a classic, purist Brettljause (cold cuts platter) with mature mountain cheese.
