Wine Description for LUI XXI Komet Bianco IGT 2021 by Alois Lageder

Colour & Appearance
Intense golden yellow in the glass – a hue that already hints at the unconventional vinification with skin contact and lends this Sauvignon Blanc an unusual visual depth.
Nose
Initially, the wine presents itself with fascinating reduction, bringing forth stony and earthy notes – a welcome departure from typical Sauvignon aromatics. After aeration, a complex bouquet unfolds of Boskop apples, apricots and vineyard peaches, underpinned by wild herbs such as sage, fennel herb and a hint of white pepper. This nose promises tension and depth.
Palate
Here the true class of this wine reveals itself: vibrant freshness meets a creamy texture, which stems from eleven months of yeast ageing. The fine salinity lends structure, whilst juicy fruit provides balance. With only 11.5% alcohol, this wine embodies the principle of „power without weight“ – intensity without heaviness. The drinking flow is seductive, the fine spice addictive.
Finish
Persistent and spicy with mineral precision that underscores its earthy character. The acidity remains present, but perfectly integrated.
Grape Variety & Vinification
Sauvignon Blanc, radically reinterpreted: 40% whole-bunch fermentation (partially crushed), 60% direct press. After five days united in a 13-hectolitre wooden barrel, where the wine ferments spontaneously, undergoes malolactic fermentation and matures for eleven months on full lees. Unfined bottling in August 2022. Early harvest on 25 August ensures crisp freshness.
Food Pairing Recommendations
Grilled char, veal brisket with herb sauce, asparagus with brown butter, goat’s cheese tart or Vitello Tonnato. The saline component harmonises wonderfully with seafood and oysters.
