Savagnin

Savagnin is the beating heart of the Jura, a grape variety that, like few others, stands for gripping acidity, enormous longevity, and deep, salty spice. Famous for oxidative ageing under a veil of yeast, the Vin de Voile, it reveals complex notes of walnut and dried apple in the glass. Yet, when bottled fresh, it also delights with aromas of quince and stony minerality. Just how multi-faceted this variety is interpreted in its homeland is demonstrated by Domaine Grand with their precise single-vineyard wines from Arbois and the profound monuments from Château-Chalon.

That this alpine grape also shines on volcanic soils is proven by the Sicilian estate I Vigneri di Salvo Foti, where it unfolds a completely new, smoky depth on Mount Etna or blends harmoniously with Chenin Blanc. Gastronomically, Savagnin shines alongside mature Comté, white meat with mushroom sauces, or rich fish dishes.
