Character
The Château-Chalon from Domaine Grand represents one of France’s most extraordinary wine traditions. As a Vin Jaune – yellow wine – it embodies the uncompromising craftsmanship of the Jura. This wine is created through at least six years of maturation under a flor yeast veil, which gives it its characteristic oxidative style. The unusual 620ml bottle, the Clavelin, is itself a symbol of this unique wine culture and corresponds to the amount remaining from one litre of must after years of evaporation.
Terroir & Origin
Château-Chalon sits atop a spectacular limestone plateau above the Seille valley and is considered the most prestigious appellation in the Jura. The blue marl and limestone soils of the „En Beaumont“ vineyard site lend the wine its mineral depth. The continental climate with its cold winters and warm summers creates ideal conditions for the late-ripening Savagnin grape. This exposed site at 400 metres altitude has been renowned for exceptional Vin Jaune for centuries.
Grape Variety & Vinification
The Savagnin grape is the undisputed queen of the Jura and the only permitted variety for Château-Chalon. After fermentation, the wine matures for at least six years and three months in old oak barrels that are intentionally not completely filled. The resulting flor yeast veil protects the wine from complete oxidation and develops complex aromas of walnuts, curry, dried fruits and spices. The 2015 vintage benefited from optimal ripening conditions. These wines are virtually immortal.
Food Pairing Recommendations
A Vin Jaune demands powerful, spicy dishes. Classic with Poularde au Vin Jaune, the famous chicken dish with morels and cream. Excellent with Comté cheese, particularly aged varieties, as well as blue cheese. Also a revelation with langoustines, lobster with buttery sauces or foie gras. Asian cuisine with curry dishes harmonises surprisingly well with the spicy complexity of this extraordinary wine.
