The Château-Chalon from Domaine Grand embodies one of France’s most distinctive and fascinating wine styles. As a Vin Jaune (yellow wine), this Savagnin matures for a minimum of six years and three months beneath a natural flor yeast layer in old oak barrels – without topping up. This oxidative maturation imparts the wine its characteristic nutty complexity, aromas of walnuts, curry, dried fruits and remarkable longevity. With 16% alcohol, it possesses power and structure, yet remains elegant and mineral-driven.
Terroir & Origin
The Jura is a small yet significant wine region in eastern France, characterised by chalky soils and cool continental climate. Château-Chalon itself is a tiny appellation – a picturesque village perched on a rocky plateau – that produces exclusively Vin Jaune. The „En Baumont“ vineyard site benefits from distinctive marl structure and optimal south-westerly exposure. Domaine Grand cultivates old Savagnin vines here, which yield concentrated grapes through low yields.
Grape Variety & Vinification
Savagnin is the undisputed queen of the Jura, a thick-skinned, late-ripening variety with naturally high acidity. Traditional vinification follows strict regulations: after fermentation, the wine matures in 228-litre barrels, deliberately left unfilled. The resulting flor yeast partially protects the wine from oxidation whilst imparting its unique aromatics. The characteristic 620ml Clavelin bottle reflects the volume remaining from one litre after the lengthy maturation period.
Food Pairing Suggestions
This powerful wine demands equally characterful dishes: Comté cheese (ideally aged 24 months), morels in cream sauce, Coq au Vin Jaune, roasted calf’s sweetbreads or roasted walnuts. It also shines with foie gras or robust mushroom dishes. Serving temperature should be 14-16°C.
