As a Vin Jaune (yellow wine), this pure Savagnin undergoes a minimum six-year maturation beneath a flor yeast veil – similar to Sherry, but with its own distinctive Jura identity. The unconventional 620ml bottle, the Clavelin, symbolises the quantity remaining after years of evaporation from one litre of wine. With 16% alcohol and oxidative character, this is a wine of monumental concentration and virtually unlimited ageing potential.

- Château-Chalon sits majestically on a limestone plateau overlooking the Jura valley and is regarded as a Grand Cru of the region – France’s only appellation producing exclusively Vin Jaune. The „En Baumont“ vineyard site benefits from the region’s characteristic marl soils with blue and grey clay, which impart mineral tension to the Savagnin grape. The continental climate with cold winters and warm summers, combined with the elevated altitude, creates ideal conditions for this extreme winemaking approach.

- Savagnin, the indigenous grape variety of the Jura, reveals its full personality here. After fermentation, the wine matures for a minimum of six years in old oak barrels that are deliberately left unfilled.
