Character
The Château-Chalon „En Baumont“ by Domaine Grand represents one of Europe’s most distinctive and fascinating wine traditions. As a Vin Jaune (yellow wine), this pure Savagnin undergoes a minimum six-year maturation beneath a flor yeast veil – similar to Sherry, but with its own distinctive Jura identity. The unconventional 620ml bottle, the Clavelin, symbolises the quantity remaining after years of evaporation from one litre of wine. With 16% alcohol and oxidative character, this is a wine of monumental concentration and virtually unlimited ageing potential.
Terroir & Origin
Château-Chalon sits majestically on a limestone plateau overlooking the Jura valley and is regarded as a Grand Cru of the region – France’s only appellation producing exclusively Vin Jaune. The „En Baumont“ vineyard site benefits from the region’s characteristic marl soils with blue and grey clay, which impart mineral tension to the Savagnin grape. The continental climate with cold winters and warm summers, combined with the elevated altitude, creates ideal conditions for this extreme winemaking approach.
Grape Variety & Vinification
Savagnin, the indigenous grape variety of the Jura, reveals its full personality here. After fermentation, the wine matures for a minimum of six years in old oak barrels that are deliberately left unfilled. Beneath the developing yeast veil, the wine develops its characteristic aromas of walnut, curry, dried fruits and spices. This biological maturation gives the wine its golden-yellow colour and oxidative complexity, whilst natural acidity preserves freshness. Domaine Grand works traditionally, respecting the centuries-old methodology of this unique wine culture.
Food Pairing Recommendations
A wine for discerning gastronomic moments: classically with Comté cheese (aged at least 24 months), morels in cream sauce, Coq au Vin Jaune or pan-seared scallops. Excellent also with roasted sweetbreads, foie gras or nutty dishes. The oxidised notes harmonise beautifully with Asian cuisine, such as curry dishes or caramelised pork.
