Wine Description for Nature de Solemme Blanc de Blancs Brut Nature Millésimé 2017 by Solemme

Colour & Appearance
Medium straw yellow with an exceptionally fine, elegant perlage.
Nose
Ethereal and radiantly fresh. Alongside pronounced notes of citrus fruit and mellow apple, fine autolytic nuances of fresh fine pastries and an invigorating minty note reveal themselves. The aromatics feel simultaneously mature, full and stylistically spot-on.
Palate
On the palate, after years of ageing, it reveals a creamy, captivating mousse. The uncompromising decision to forgo malolactic fermentation endows this Champagne with a gripping freshness and tremendous drive. Tart citrus peel, vibrant energy and a salty minerality define the mouthfeel.
Terroir & Origin
The Chardonnay grapes for this single-parcel Champagne are grown on sandy-clay soils near Chamery in the Petite Montagne de Reims. The cool microclimate and meticulous viticulture are unmistakably reflected in the glass.
Grape Variety & Vinification
A Blanc de Blancs made from 100% Chardonnay from the 2017 vintage. Olivier Langlais works without chaptalisation, filtration or cold stabilisation. The base wine did not undergo malolactic fermentation. Following at least 36 months of lees ageing, it is disgorged with no added sulphur – bottled completely without dosage as a Brut Nature.
Food Pairings
Superb with oysters served with a ginger and Tabasco vinaigrette, a flavourful sardine escabeche, or delicate scallops with wild garlic and cream.
Particularities
A radical terroir Champagne: From organic and biodynamic cultivation (Demeter-certified), spontaneously fermented and strictly tended according to the lunar calendar. As an uncompromising Brut Nature, it presents its terroir completely unmasked.
