Tasting note
Character
The Octave zero dosage 2022 is an uncompromising, purist Champagne that makes the steadfast ethos of Jérôme Blin tangible. Free from the protective coat of residual sugar, this single-varietal sparkling wine presents itself unadorned, crystal-clear and with captivating freshness. Instead of superficial fruit, it impresses with cool clarity, a razor-sharp structure and a fascinating tension on the palate. A Champagne for explorers seeking authenticity and artisanal philosophy far removed from the industrial mainstream.
Terroir & Origin
Originating from the vineyards of Vincelles in the Vallée de la Marne, approximately 20 kilometres west of Épernay, the wine reflects the unique mosaic of this sub-region. The local soils are characterised by chalk, clay, sand and flint. Jérôme Blin farms his land biodynamically, using draught horses for ploughing and sheep for cover-crop management. This vibrant soil life forms the foundation for a Champagne that conveys its origin without interference.
Grape Variety & Vinification
Defined by Chardonnay, this vintage Champagne expresses the elegance and cool breed of the white grape variety. The grapes are fermented spontaneously with wild yeasts. The uncompromising decision to omit any shipping dosage (Zero Dosage) gives the wine the necessary freedom to reveal itself entirely independently after its time on the lees. Nothing is masked; the grape material shows itself in its purest form.
Food Pairings
Thanks to its uncompromising dryness, this Champagne is brilliantly suited as an invigorating aperitif or paired with minimalist seafood dishes. It provides a worthy frame for oysters, fresh sashimi or lightly steamed turbot. The unvarnished nature of this sparkling wine also offers a brilliant complement to fine crustacean tartare.
