Information
The grapes come from limestone soils in Villers-aux-Nœuds and from the clay-limestone slopes of Chamery. An assemblage of 50 % Chardonnay and 25 % Pinot Noir as well as 25 % Pinot Meunier was used here. There was no chaptalisation and no filtration or tartaric stabilisation. No sulphur was added when the wine was disgorged after at least 36 months. Esprit de Solemme contains no dosage.
Color
Light bronze colour with lively perlage
Nose
The Esprit de Solemme has an elegant aroma and a character all of its own. The notes of noisette, pastry and preserved lemon peel are mixed with scents of fino sherry, a little rock and herbs.
Palate
These slight hints of sherry can also be found on the palate together with notes of ripe and crunchy stone fruit, grapefruit peel and citrus fruits. The champagne is dry and straight with a present mousseux and a chalky texture. It has an individual character.
