Colour & Appearance
Deep garnet red with vibrant violet reflections – a Pinot Noir of remarkable colour intensity, indicating optimal ripeness and concentrated fruit selection.
Nose
Captivating density and expressiveness: dark blackberries and ripe cherries dominate, complemented by wild raspberries and blackcurrant. This opulent fruit is elegantly framed by Mediterranean herbs such as rosemary, thyme and a hint of juniper. An aromatic profile that immediately captivates.
Palate
The aromatic promise of the nose is impressively delivered on the palate: succulent, ripe fruit meets youthful yet mature tannins, which lend the wine structure and grip. The fine acidity plays skilfully with the natural fruit sweetness, bestowing upon this Pinot Noir that finesse and elegance one expects from a fine Sancerre rouge. Playfulness, charm and remarkable balance characterise this wine.
Finish

Terroir & Origin
The 0.98 hectare vineyard site in the „Les Herses“ cru thrives on characteristic silex soil (flint), which imparts mineral structure to the wine. The south-easterly aspect of the stony terroir ensures optimal sun exposure. 45-year-old vines at high planting density of 7,700 stocks per hectare and moderate yield of 40 hl/ha.
Grape Variety & Vinification
100% Pinot Noir, hand-harvested. Vinification with 30% whole bunches and 70% destemmed grapes, cold maceration over 2-3 days, three-week maceration fermentation. Malolactic fermentation in ceramic tanks and 50% in 228l wooden barrels on fine lees, followed by refinement in stainless steel tank to preserve freshness. Bottling according to lunar cycle.

Pheasant breast with smoked bacon and lentil vegetables, beef fillet in savoy cabbage with truffle jus, salad of Jerusalem artichoke and radicchio with wild raspberry dressing or game and mushroom dishes.
