Info about the wine

Vineyards of 0.98 hectares cultivated in the village of "Les Herses" on a "Silex" soil. The stony, south-east facing terroir gives the wine a certain structure. The Pinot Noir vines are on average 45 years old, the planting density is 7,700 vines per hectare, with a yield of 40hl. After manual harvesting, 30% whole bunches and 70% destemmed grapes undergo cold maceration for 2-3 days before fermentation. The subsequent maceration takes place over three weeks. After small remontages, the pomace is pressed at low pressure, and the pre-maceration and pressed juice are combined. Malolactic fermentation takes place in ceramic tanks and 50% in 228 litre wooden barrels on the fine lees. After removal from the vats, further maturation takes place in stainless steel tanks to refine the wine while maintaining its freshness. Bottling takes place according to the lunar cycle.

Color

Light, elegant and translucent cherry red colour.

Nose

The 2021 Sancerre Rouge "Les Heres" shows a red fruity nose, cherry, cherry stone, paired with some foliage and wild Mediterranean herbs, which subtly hint at and seduce the nose. A veritable firework display of pure finesse and elegance announces itself.

Palate

Extremely elegant, juicy and full of finesse, it glides over the tongue with a polished tannin structure and a mineral-salty character. The invigorating acidity ends in a wonderful finish and you are immediately tempted to have another glass. The delicate fruit sweetness does the rest to round off this delicately flavoured Pinot perfectly.
