Colour & Appearance
Luminous pink grapefruit with an exceptionally vibrant, fine-beaded mousse that fills the glass with energy and elegance.
Nose
Precise, focused, unusually profound: The nose opens with cool notes of wild raspberry and wild strawberry, before an almost meditative spiciness unfolds – undergrowth, porcini mushrooms, a hint of soy sauce. No rosé for lovers of the merely pleasant. Here speaks a wine that anchors umami already in its bouquet.
Palate
Bone-dry, taut and carried by impressive minerality. The fruit is there – delicate, precise, cool – but it is the saline texture and vibrating tension that sets this Champagne apart from all mainstream offerings. The carbonation is finely integrated, invigorating without being intrusive. A wine that demands and simultaneously captivates.
Finish
Long, spicy, with persistent minerality and a dry, almost austere aftertaste that immediately awakens the hunger for the next sip – or the next course.
Terroir & Origin
The grapes come from the Coteaux de Rivières of the Vallée de la Marne – from the communes of Œuilly, Boursault, Celles-lès-Condé and Saint-Agnan. The soils are complex: Campanian chalk, flint pebbles, Lutetian limestone and siliceous sands. Vines with an average age of 40 years lend the wine depth and concentration.
Grape Variety & Vinification
A blend of 42% Pinot Noir, 37% Chardonnay and 21% Meunier, supplemented by 25% reserve wines from the 2018 vintage. The Pinot Noir was obtained through gentle maceration, the Chardonnay through slow gravity pressing. Spontaneous fermentation, six months ageing in old oak barrels, no malolactic fermentation, no filtration. Bottled in April 2019, disgorged in February 2024 after nearly five years on the lees. Dosage: 0 g/L – Brut Nature.
Food Pairing Suggestions
A born food companion. Ideal with grilled tuna, scallops with mushroom essence, beef tartare or a classic umami dish from Japanese cuisine. Also a revelation with aged Parmesan or wild mushroom risotto.
