Wine Description for Ried Trinkaus Sauvignon Blanc DAC 2021 from Sattlerhof

Colour & Appearance
Pale straw yellow with subtle green reflections – a visual foretaste of the youthful freshness of this extraordinary Sauvignon Blanc.
Nose
With four years of bottle maturity, this wine still reveals itself with restraint and demands patience in the glass. A fascinating tension unfolds between smoky-dark mineral notes and bright floral accents of blackcurrant and flowers. Added to this are herbs, pea pod, Meyer lemon and, with increasing aeration, fine nuances of yellow kiwi and yellow apple. A Sauvignon that does not reveal itself immediately.
Palate
Here the true greatness of this wine reveals itself. What appears closed on the nose explodes on the palate into a juicy, textured and electrifying experience. The topography of the amphitheatre-like vineyard is mirrored in the structure: peach, apricot, carambola and Cape gooseberry merge with white currant, lime and grapefruit. Beneath lies a layer of almonds, nuts and herbs. The vibrant acidity tingles at the edges of the tongue and combines with a deep, saline, chalky minerality that gives this wine its unique signature.
Finish
Long, saline and with lingering freshness. The mineral component remains present and creates that irresistible urge for the next sip – the name „Trinkaus“ proves to be a programme.
Terroir & Origin
The Ried Trinkaus sits at just under 500 metres elevation on the Kranachberg in South Styria. The outward-curving south-facing slope benefits from warm thermal currents from the Kranachtal valley whilst enjoying nocturnal cooling – ideal conditions for Sauvignon Blanc. The approximately 45-year-old vines are rooted in sparse limestone scree and gravel soil, which gives the wine its distinctive mineral character.
Grape Variety & Vinification
100% Sauvignon Blanc, hand-harvested, spontaneous fermentation at 1.1 g/l residual sugar with 6.5 g/l acidity. The wine matured two years on the lees in stainless steel tanks – a method that combines freshness and precision with complexity and texture.
Food Pairing Recommendations
Scallops, monkfish, pike-perch with herb crust, asparagus with Hollandaise sauce, goat’s cheese or aged Comté. The saline minerality harmonises perfectly with seafood and the structure also carries richer fish dishes.
