Wine information

Perpetuum is the essence of Zillinger's wine style. It embodies the elegance of the Veluesthe minerality and coolness of the Parcellaires and the pressure and complexity of the Numbers.

The Sauvignon Blanc was harvested by hand on 17 September 2020. Whole bunch pressing took place at 80 % and intracellular fermentation at 20 % in 500 litre amphorae for five days. The wine was then slowly pressed and aged for 12 months under flor yeast in three old Champagne barrels. The total sulphur is 18 mg, the pH value is 3.2 and the residual sugar is 0.7 grams.

Nose

What a wonderful nose the Perpetuum blanc in front of you! The pure Sauvignon Blanc, matured under flor yeast, smells of cellar apples, a little meadow honey, ripe yeast dough and beeswax. There are also ground almonds and nuts, some blond tobacco and a hint of walnut. Finally, there are notes of candied ginger and candied pineapple, some ripe kumquat and verbena. All of this changes again and again with air and warmth.

Palate

On the palate, this is a multi-layered wine full of elegance and density, a deep, inner strength and simultaneous transparency and vibrancy. It is a wine with vital acidity and impressive vibration and tension, a hint of gooseberry and clear notes of lime and grapefruit. The Sauvignon Blanc is yeasty and therefore sensual and silky, reminiscent of salt lemon, verbena and lemon balm. It coats the palate and lingers for minutes after you have swallowed. This is an exceptional Sauvignon Blanc that need fear no comparison.
