Terroir & Origin
The Ried Sernauberg is a south-east facing basin vineyard site with spectacular steep slopes up to 90%. The approximately 30-year-old vines are rooted in fine quartz sands, interspersed with mica – a geological constellation that gives this wine its distinctive mineral signature.
Grape Variety & Vinification
100% Sauvignon Blanc from fully ripe grapes, spontaneously fermented in stainless steel tank. The wine matured for an impressive 24 months on the lees, which gives it depth, texture and additional complexity without masking the varietal freshness. With 1.1 g/l residual sugar practically dry, the vibrant acidity of 6.4 g/l ensures perfect balance.
Food Pairing Recommendations
Pike-perch or char with herbs, asparagus in all its variations, goat’s cheese, oysters, sushi and sashimi, as well as Vitello Tonnato. The saline minerality makes it the ideal companion for seafood.
