- Pale yellow with vibrant green reflections – a wine that already promises freshness and depth in the glass.
- Nose
- Restrained and marked by great discipline. The extended time on lees leaves its mark: sourdough crust and a fine yeast veil envelop the aromatic structure. Beneath this unfolds a herbaceous spice from black cumin, coriander and fennel fronds, carried by the vibrant zest of grapefruit. Chervil and citrus blossom add floral notes to the top notes. No aromatic noise – only precise, stony elegance.
- Palate
- On the palate, the citrus theme from the nose unfolds with impressive consistency: from lemon through mandarin to ripe orange, always accompanied by the essential oils of the zests. The texture is creamy and full-bodied, with solid structure and a taut, precise acidity. Everything is in its place – disciplined, balanced, without a hint of overripeness or aromatic eccentricity.
- Finish
- Long and mineral, with a lingering echo of citrus peel and fine herbal spice. The wine bids farewell quietly, yet impressively.
- Terroir & Origin
- The vineyard site Fosilni Breg – the „Hill of Fossils“ – lies directly adjacent to the legendary Zieregg at 340 to 480 metres elevation in South Styria. Coral limestone soils, rich in fossilised marine creatures, meet clay-rich marl (Flysch/Opok) and fertile brown earth. A terroir that reduces Sauvignon Blanc to its essence.
- Grape Variety & Vinification
- Sauvignon Blanc from particularly small-berried grapes, selected only in exceptional vintages for the Réserve. After extended skin contact time, spontaneously fermented, then aged 30 months on fine lees and bottled unfiltered. A wine that demands patience and rewards with depth.
- Food Pairing Recommendations
- Ideal with grilled turbot with caper butter, scallops on pea purée or a goat’s cheese soufflé. Also a remarkable pairing with Asian-inspired fish dishes featuring coriander and lemongrass.
