- The Kapellenweingarten is the highest-altitude vineyard site of Sattlerhof, at an impressive 600 metres elevation in South Styria. Slopes ranging from 20 to 70 % and soil composed of calcareous quartz and pebble scree shape a wine of crystalline minerality. The cool, airy microclimate ensures late ripening and a naturally vibrant acidity structure.
- Grape Variety & Vinification
- From approximately 35-year-old Morillon vines (Chardonnay) – hand-selected, spontaneously fermented with merely 1.1 g/l residual sugar and 6.1 g/l acidity. Maturation took place over two years in large, neutral wooden casks: no artifice, no distraction – merely the expression of place and vintage.
- Food Pairing Suggestions
- Ideal with grilled turbot or scallops in butter sauce, equally suited to calf’s sweetbreads, pasta with white truffle or mature Comté. The saline minerality also makes it a congenial companion to oysters.
