Wine Description for Quattuor IV Extra Brut by Drappier

Colour & Appearance
Pale golden yellow with green reflections and lively, fine-beaded mousse – a visually elegant Champagne that reveals its freshness in the glass.
Nose
The bouquet is remarkably dense: white flowers meet lemon cream in warm pastry with almond slivers. Joined by mirabelle plums, soft apples, ripe pineapple, quinces and a hint of honey – an aromatic kaleidoscope reflecting the complexity of these rare grape varieties.
Palate
Here the Quattuor shows its true greatness: complex, spicy and austere with a dynamic acid arc that exerts pleasant pressure. The subtle mousse carries bright fruit, autolytic notes and spicy accents. The texture is tension-filled, precise and clearly structured – a Champagne for connoisseurs that places finesse above opulence.
Finish
Long, precise and with clear structure. The piquant acidity remains present, accompanied by spicy and fruity nuances that slowly fade.
Terroir & Origin
The grapes come from the Kimmeridgian limestone soils of Urville in Champagne – those fossil marine deposits that also characterise Chablis and impart minerality and tension.
Grape Variety & Vinification
A rarity: 25% each of Arbanne, Petit Meslier, Blanc Vrai (Pinot Blanc) and Chardonnay – almost forgotten Champagne grape varieties. Only the first pressing (cuvée) was used, mechanically pressed with low pressure, the must flowing by gravity into the tanks. Fermentation in stainless steel at low temperature, complete malolactic fermentation, no filtration or cold stabilisation. 2-3 years bottle ageing, dosed with 4.2 g/l sugar.
Food Pairing Suggestions
Sardines in spiced olive oil with crusty country bread, blanquette de mer or a spicy rabbit terrine with green peppercorns – the Quattuor loves aromatic, spicy dishes that complement its complexity.
Special Features
A unique Champagne that tells the biodiverse history of Champagne. The dégorgement date is engraved on the bottle base – transparency and craftsmanship par excellence.
