Wine Description for Puligny-Montrachet “Les Climats” AOC 2023 by Thomas-Collardot

Character
Puligny-Montrachet is regarded as one of the most venerable addresses in the wine world – a village whose name alone awakens expectations. Thomas-Collardot, a domaine with deep roots in the Côte de Beaune, interprets this appellation with artisanal care and a clear commitment to provenance. The vintage 2023 brought warm, dry conditions to Burgundy, yielding ripe, expressive wines with natural fullness – whilst maintaining remarkable freshness where the vineyard sites permitted.
Terroir & Origin
Puligny-Montrachet lies in the heart of the Côte de Beaune, on limestone-rich, well-drained soils that impart to Chardonnay that characteristic minerality and precision for which the village is world-renowned. The designation “Les Climats” refers to the Burgundian concept of precisely delimited individual vineyard sites – an expression of lived terroir philosophy that has formed the foundation of this wine culture for centuries and has been recognised as a UNESCO World Heritage Site since 2015. Each parcel tells its own story here.
Grape Variety & Vinification
Pure Chardonnay – in Burgundy the only conceivable choice for white appellation wines of this calibre. In Puligny, the variety finds perhaps its most elegant expression: taut, refined, with a tension between ripeness and acidity that promises excellent ageing potential. Thomas-Collardot stands for respectful, traditional winemaking that places terroir at the forefront and allows the wine to unfold over the years. The alcohol content of 13.5% vol. indicates well-balanced ripeness.
Food Pairing Recommendations
A wine of this provenance demands partners of equal standing. Classically it harmonises with lobster or scallops in butter sauce, equally with turbot or Dover sole. On land, sweetbreads, poultry in cream sauce or more mature Burgundian cheese specialities such as Époisses are recommended. Even a simple roast chicken – well prepared – would be no understatement.
