Wine description for Puligny-Montrachet “Les Climats” AOC 2023 1500ml Magnum by Thomas-Collardot
- Character
- Puligny-Montrachet in its most slender form: taut, saline, chalky. Thomas-Collardot stands for Chardonnay without make-up – no clouds of vanilla, no buttered toast, but rather delicate citrus fruit, cool clarity and a dry, mineral drive. The magnum format grants this wiry wine additional freshness and calm development.
- Terroir & Origin
- The domaine lies in the heart of Puligny-Montrachet, the white soul of the Côte de Beaune. The family estate covers just 2.5 hectares, its roots tracing back to Jacqueline Collardot’s grandfathers Henri Chavy and Maurice Thomas. Limestone-driven soils and long-established parcels such as Les Enseignères and Hameau de Blagny shape the house style – transparency rather than opulence.
- Grape variety & Vinification
- Chardonnay, vinified with a gentle hand: soft pressing, 24 hours’ settling, ageing in used 228-litre pièces, sixteen months on the fine lees for the village wines. There is no fining, only light filtration; since 2021 the estate has been organic-certified, and sulphur is largely dispensed with. Around 10,000 bottles a year – craftsmanship in the smallest of editions.
- Food recommendations
- A wine for the laid table: poached sole, langoustines in lemon butter, coq au vin blanc or goat’s cheese from Burgundy find a refined counterpart in its saline structure. Also a harmonious choice with risotto with green asparagus.
Small, focused, unhurried – a Puligny that shows why the village enjoys its reputation, without ever shouting about it.
