Colour & Appearance
Deep, luminous ruby red with youthful brilliance – a Spätburgunder that visually hints at its origins from sparse shell limestone.
Nose
Multi-layered and precise: cherry and blackcurrant at the centre, framed by raspberry and wild strawberry. These are joined by juniper, nutty nuances and subtly charred oak. An ethereal note and a whisper of lavender lend the bouquet elegance and complexity.
Palate
Juicy and seductive, the wine opens with cherry and raspberry fruit. The extract sweetness gives it hedonistic charm without losing Franconian directness. Earthy notes, leather and undergrowth bring depth, whilst a chalky texture bears witness to the shell limestone. The tannin is fine-grained and slightly drying – youthful, yet promising.
Finish
Long and spicy, carried by lively, fresh acidity. The wine bids farewell with mineral precision and lingering fruitiness.
Terroir & Origin
The vineyard site Maustal near Sulzfeld am Main is a steep slope of only four hectares with south and south-east exposure. The sparse, skeleton-rich Upper Shell Limestone fundamentally shapes the structure and minerality of this wine. The winery’s oldest self-seeded vines are rooted here.
Grape Variety & Vinification
100% Spätburgunder (Pinot Noir), hand-harvested and completely destemmed. Spontaneous fermentation in open fermentation vessels, approximately two weeks of skin contact, no chaptalization. Maturation over eighteen months in Burgundy barrels, one third of which are new. Purist cellar technique for authentic expression.
Food Pairing Suggestions
Perfect with roasted venison loin, duck breast with cherry sauce, braised oxtail or aged Comté. Also an excellent choice with porcini mushroom risotto or Coq au Vin.
