Wine Description for Pi:we Souvignier Gris 2021 by M. Schädler – Steffen Mugler

Character
A wine of remarkable structure and intellectual ambition that stands refreshingly apart from the mainstream. This Souvignier Gris presents itself unadorned and characterful. It does not seduce through upfront primary fruit, but rather through a fine, austere phenolic profile, grippy texture and a vibrant, profound freshness. An absolutely honest, artisanal wine with tremendous drinking flow and a firm, mineral core that unites power and elegance without any heaviness.
Terroir & Origin
The grapes thrive in the vineyard sites around Maikammer in South Palatinate. The local soils of calcareous marl and bunter sandstone impart the wine’s fine minerality and substance. Protected by the ridge of the Haardt, the vines benefit from an almost Mediterranean microclimate, whilst the cooler vintage of 2021 provides a precise, taut acidity structure that gives the wine vibrancy and focus.
Grape Variety & Vinification
Souvignier Gris is an innovative, fungus-resistant grape variety (PIWI) that facilitates organic viticulture in the vineyard. Winemakers Steffen Mugler and the Schädler family vinify it with consistent restraint: spontaneous fermentation, an extended, stabilising maturation on the fine lees and minimal intervention in the cellar. This gentle élevage brings out the grape variety’s natural texture perfectly and lends the wine its Burgundian polish.
Food Pairing Recommendations
Thanks to its structure and austere freshness, this wine is a versatile food companion. It pairs excellently with pan-fried fish, light meats such as herb-roasted chicken breast, hearty vegetable pastries or a classic onion tart.
