Tasting note
Character
An uncompromising, distinctive sparkling wine that reveals the rebellious side of Champagne. Bottled as a Brut Nature without any dosage, it presents itself puristic, gripping and with unadulterated freshness. On the palate, a fine texture combines with a taut grip – an expressive elixir for lovers of artisanal sparkling wines far beyond the mainstream.
Terroir & Origin
The grapes hail from Coulommes-la-Montagne, a Premier Cru village in the heart of the Petite Montagne de Reims. The cool, harsh and humid microclimate of this sub-region demands everything from the vines. Serving as a reliable mouthpiece for the terroir, the interplay between the cool weather and chalky soils brings a pointed acidity and a striking, salty texture to the wine.
Grape Variety & Vinification
This vintage Champagne is a single-varietal 100% Pinot Meunier. Here, Jean Servagnat proves that the often-underestimated Meunier grape can develop remarkable structure in the right soils. The vineyards are cultivated biodynamically with painstaking hand labour. In the cellar, Servagnat lets nature take the lead: the base wine is spontaneously fermented with wild yeasts, aged in three-year-old barriques, and finally bottled unfiltered with minimal sulphur addition.
Food Pairings
Thanks to its bone-dry, straightforward character, this Champagne is an excellent partner for iodine-rich delicacies. It shines alongside oysters, scallops, scallop sashimi or pan-seared turbot. It also provides a focused counterpoint to puristic Pata Negra ham or aged Comté.
