Tasting note
Character
A purist, uncompromising artisan Champagne with immense poise. Defined by the uncompromising philosophy of a career changer, this Extra Brut reveals a fascinating balance of structure, delicate salinity, and a distinctive, finely woven fruit profile. A sparkling wine that embraces pure authenticity, delivering the unadulterated expression of its origin without any stylistic compromise.
Terroir & Origin
The grapes hail from the Premier Cru vineyard sites of Coulommes-la-Montagne in the heart of the Petite Montagne de Reims. The microclimate of this sub-region is noticeably cool, harsh, and humid – conditions that imbue the wines with their taut freshness. The name of the cuvée comes from local usage, in which “galipe” means roughly “vineyard”; it refers to the chalk-influenced vineyards of the area, which lend the wines a pronounced soil-driven tension.
Grape Variety & Vinification
The blend brings together 68% Pinot Meunier alongside Chardonnay and Pinot Noir from vines averaging 25 years of age. As a biodynamically working micro-grower, Jean Servagnat relies on minimal, artisanal intervention: fermentation is spontaneous using wild yeasts, with ageing split between oak and stainless steel. The wine is unfiltered, and sulphur addition is kept strictly minimal to avoid altering the flavor – yielding an unadorned, exceptionally clearly structured Extra Brut.
Food Pairings
Thanks to its gripping profile and subtle dosage, this Champagne pairs beautifully with oysters, crustaceans, or thinly sliced scallop sashimi. It is equally magnificent alongside aged Comté or gently seared turbot.
